Scottish Shortbread cookies

Playtime and stuffie parties get sorted with this easy 3 ingredient Scottish shortbread cookies. Their crumbly soft texture reminded me of the soft bakery style butter cookies of my childhood. The use of brown sugar imparts a lovely molasses-y flavor to these cookies, that not just the kids but the adults will also be after the cookie tin!

Ingredients

  • All-purpose flour – 1 to 1 ½ cups
  • Butter – ½ cup
  • Light brown sugar – ½ cup

Method

Ready to bake!

Mix the butter and sugar in a bowl until nice and creamy. Add 1 cup flour and mix well. Remove the dough onto a floured surface and knead well for about 5 minutes to form a soft dough. Add the remaining ½ cup of flour, if required, at this stage to achieve this consistency.

Roll out the dough to about ½ inch thickness and cut rectangular shapes of 1×3 inches (you can use cookie cutters and make circles too if you prefer). Transfer to a parchment lined sheet pan and arrange them an inch apart. Use a fork to prick them so as to help release the steam during the baking process.

Bake in a preheated oven at 325F for 20 to 25 minutes or until lightly browned. Cool before storing the cookies in an airtight container for later.

    1. Nivi the use of normal sugar wouldn’t make a difference to the baking process in that it affects texture. But there will be a flavor difference. The brown sugar adds a nice caramely taste .
